Zafrani Chai

  2. For tea concentrate:
  3. 2 tablespoon tea powder
  4. 3 cup water
  5. 4 cloves
  6. 1/2 tsp ginger cruhsed
  7. 2 cardamom
  8. For saffron milk:
  9. 1 and 1/2 cups milk
  10. 10 strands saffron
  11. 2 teaspoon sugar, optional

    Make a checklist. Keep all ingredients within reach

    Crush cardamom, cloves roughly using a mortar and pestle. Likewise crush saffron roughly using a mortar and pestle. This is for the flavour to infuse well. Soak saffron in 1tbsp hot water to give nice color, Crush ginger also the same way

    On medium high heat Boil 3c water in a sauce pan add crushed cardamom, ginger, and cloves. Bring it to boil. Add tea powder.Simmer until it reduces to half. Strain and collect in a cup. Set aside.

    Over medium heat in another sauce pan add milk to it. I use 1% fat milk. You may use regular milk. Let it boil well. Keep an eye on the milk to prevent boiling ove and make a mess. Add the soaked saffron.Mix well. Simmer for few mins.Color changes and milk is thickened. Switch off.

    Add the milk with saffron to tea concentrate
    mix it well.
    Finally, pour into serving cup and add few strands of saffron. Serve Zafrani Chai hot!.
