Healthy Quinoa Salad with Smoked Salmon!
Ingredients
Serves 5-6.
- 1 cup quinoa (about 170 grams)
- 1/2 yellow onion, diced
- 1/2 cucumber, diced
- 2 avocados, sliced
- 2 Roma tomatoes, diced
- 1/2 bunch parsley, finely chopped
- 1 teaspoon dried or fresh mint
- 1/2 teaspoon Cajun seasoning or Old Bay
- Freshly ground black pepper
- Juice of 1/2 lemon
- Salt
- Olive oil
- Smoked salmon (as desired)

Rinse the quinoa in a bowl of water at least three times (this is important to remove the saponins—don’t skip this step). Drain, then cook with 1 1/2 cups water (about 355 ml) and a pinch of salt. Cover and simmer on low heat for 15 minutes. When the quinoa is done, remove from heat and let it sit with the lid on for at least 5 minutes. Transfer to a large bowl and let cool.
