Cinnamon Roll Cookies 🍪

 

Ingredients


  1. 1/2 cup powdered sugar
  2. 2 tbsp water
  3. 1/8 tsp vanilla paste
  4. 1 1/2 tbsp room temp honey butter
  5. 3 tbsp brown sugar
  6. 1 tsp cinnamon
  7. 1/2 tsp corn starch
  8. 3 cups flour
  9. 3/4 tsp cream of tartar
  10. 1 tsp baking soda
  11. 3/4 cup room temp salted butter
  12. 1 cup sugar
  13. 2 room temp eggs
  14. 1 tsp vanilla paste
  15. 1 tbsp non dairy heavy whipping cream

    First let’s make our glaze. In to a small mixing bowl whisk up the powder sugar, water, vanilla, and a pinch of salt. Let sit on the counter. Sift your powdered sugar so your glaze isn’t lumpy like mine. If not the warmth of the cookie will melt it out 😌. 2nd pic is how my should actually look. It’ll lighten up as it cools!

    Next our cinnamon spread! In another small-ish mixing bowl fork whisk the honey butter, brown sugar, cinnamon, and cornstarch. Keep the ingredients out, you may need to whip up some more depending on how gooey you want the inside of your cookies.

    Grab another bowl, yes we’re up to 3!! Baking requires everything in your kitchen 🤭! Cream together butter and sugar. Butter is room temp so it should be fluffy.

    Add in eggs, heavy whipping cream, and vanilla paste.

    Grab, you already know, another bowl! To get one dry together. Whisk together flour, tartar, & baking soda.

    Marry (fold w/spatula) the wet and dry until just incorporated. Baking tip! Never over mix 🥲. Ask me how I know.

    Roll dough out into a rectangle on cling wrap. No roller? That’s okay neither do I. I use a wine bottle, a thermo, a can lol! Whatever gets the job done. Pop her in the fridge for 12 to 15 minutes.

    Pull out your flattened dough and grab your spread. Leave about an inch at the top. (Honestly, I probably could have rolled her out a little thinner..ah well 😅)

    Roll up your dough and back in the fridge she goes for about 20 minutes.

    Preheat oven to 350 degrees

    Cut into equal parts, and flatten with your hand. Flip your cookies in some cinnamon and sugar and place on a parchment lined cooking sheet.

    Bake for 11 - 15 minutes (depending on size— thicker will take longer) & let cool. Finish with your glaze! Enjoy 😉

Tips

The tip is vanilla paste. Is it pricey? A little. Does it transform the taste of ALL baked goods? Absolutely.

Another tip, add a half a tbsp of whipped cream cheese to your glaze. Bonus points if it’s non-dairy 😘

Last one the end taste is a little more cinnamon snickerdoodle mix, if you want less snickerdoodle before baking just do a sugar coat or add more cream cheese to your glaze!vvv
