Lemon Orzo/ Mediterranean Rice

Ingredients

 25 minutes
 6 servings
  1. 1 onion sliced
  2. 1 shallot sliced
  3. 1 garlic glove / minced
  4. 2 cups long grain rice
  5. 1/2 cup orzo
  6. 2 juiced lemons
  7. Grate 1 lemon, save zest
  8. 1/4 cup parsley
  9. Pinch sea salt
  10. 2 tbsp avocado oil
  11. 2 cups chicken broth

Steps

    Rinse rice for 30 minutes / while they is soaking get pan hot w oil and sauté onion, shallot and orzo for 5 minutes. Then add garlic. Then add 2 cups chicken broth, and lemon juice and zest.

    Add rinsed rice, parsley and place in pinch of salt and sprinkle of Greek seasoning. Put lid on for 20 minutes on low. Stir once.

    Let rice rest off heat. Enjoy! Add fresh parsley!
